This week, too, we would like to share some pictures with the food your children had during the lunch service. On Friday, April the 5th, children enjoyed a menu based on stewed vegetables with potato, beef meatballs with a side of vegetables, and seasonal fruit (orange and pear).
A vegetable stew is ideal to serve as an appetiser or as a side for a main dish. Customisable to fit with the vegetables that are in season, the vegetable stew is a great way to eat vegetables. In addition to the vegetables, and to add a little bit more flavour, this stew is often enriched with diced ham resulting in a truly delicious and healthy meal. Even though the vegetable stew is very typical of the Spanish cuisine, in countries such as Ecuador, Panama and Peru this dish pivots from its Spanish variant and places emphasis to legumes, such as chickpeas, lentils, or black beans. At school, we have added potato.
What do we know about potatoes? Potatoes are cultivated around the world. Potato can be eaten by humans and animals fresh, and processed into crisps, frozen potatoes, etc. and enjoyed after cooking. Due to the fact that potatoes are cultivated in so many places and that there is a wide range of varieties, this tuber is available all year round. Potato is a great source of energy, high in folat, vitamin C, vitamins of the B group, iron and potassium. Eating potatoes is dangerous if they are of green colour, as this means that there are high chances of the root to be toxic.
Meatballs are considered to be a healthy meal, as if handmade with the best quality meats these little balls are a great source of protein. The protein that meatballs can contribute are crucial amino acids for our body. The chosen side for this protein dish were a mix of peppers, aubergine and courgette, a very Catalan mix. These vegetables were cooked together with minced garlic, diced onion, and grated tomato with some aromatics. In Catalonia, this mix of vegetables is usually eaten as a side dish for meats cooked in the grill or the pan together with the vegetables. Did you now? In the Valencian Community having a side of vegetables is very typical when eating croquetas.
Finally, let us tell you a little bit about pears. The pear is a widely extended fruit, nowadays, and is eaten both fresh and cooked. Pear has various medicinal properties thanks to its high water and fibre content, and the richness in vitamins and minerals. Moreover, it is a good fruit to flush the body of toxins, as it is diuretic. There is a wide range of pear types, ranging from one more suitable for cooking, to rounder or thinner, etc.
