Once again, this week we would like to share with you some pictures of the food that your children were able to enjoy during the lunch service. On Tuesday, April 16th, your children had Russian salad, roasted chicken with a side of lettuce and tomatoes, and yogurt for lunch.
The main ingredients of the Russian salad are potatoes, carrots, peas, tuna, and hardboiled eggs. Of course, this mix of veggies is bound with mayo. But did you know? The Russian salad’s original name is Oliver’s salad, a salad created by the French chef Lucien Olivier in Russia. Depending on the culinary tradition of the region where the dish is being cooked, it has evolved in a different way, thus creating a myriad of variations. Olivier served his cold salad with cooked turkey, partridge, or deer meat. The meat was alternated with layers of caviar, capers, and gelatinised broth. Around the centre of the dish, crab or cow’s togue is layered to decorate together with cooked potatoes, hardboiled eggs and cucumbers. Everything is bound with spiced mayo. It seems as though clients used to mix everything together and the cook decided to serve the salad by following in their steps: mixed in the same plate.
Chicken is a domesticated bird from which we can differentiate different species. On the Other hand, depending on the conditions the bird has been brough up and the way it has been fed, even more differences can be made, from ecological chicken meat to free-roaming chicken meat. In Catalonia, we have our own Geographically Protected Identification, for all those chickens that find their origin in our country. This recognised label, makes it easy to see at a glance the quality of the product. From a nutritional standpoint, chicken is a light and easy to digest meat, when compared with red meats. This is due to the low-fat content. This beloved protein source is 70% water, 20% high quality protein and 10% lipids. Conversely, chicken contains high cholesterol and so its consumption has to be done in moderation. We can highlight some of the vitamins chicken brings us like vitamin B, iron, phosphorous and zinc. Chicken is often used in a versatile way in many gastronomical environments. Form the skin to the most tender bits, like the thighs, chicken is cooked in every way and style imaginable. Moreover, the left-over part of the chicken can be repurposed to make croquetas or cannelloni.
