Once again, we would like to share with you some picture of the food your children had during the lunch service. This week, on January the 30th, students had lentil stew, chicken fingers paired with a honey-mustard dipping souce and a side of salad. As desert students had the choice between apple and orange, two seasonal fruits.
Lentils may seem humble legumes, comfort food when times are bad. Nevertheless, under this pretence are a greatly nutritious characteristics, and even medicinal, if added as a regular ingredient in our diet. Lentils are high in protein. When dry they have a 20% protein content, and when cooked the percentage decreases to 10%. Lentils are rich in complex carbohydrates, about a 50% when dry and 25% when cooked, which combined with the fibre can create a sensation of satiation. There is no other food that has such high percentage of protein and such little percentage of fat, under a 1%.
Did you know? Lentils were consumed before the appearance of agriculture. This legume has been found in the remains of settlements from eight million years ago. They appear to be the star food source in Egyptian civilization, and the foundation for Roman soldiers’ meals.
Chicken fingers are very versatile in their preparation. This finger-liking delight is usually paired with sauces, like mustard or barbeque. From a nutritional point of view, chicken meat is lighter and easier to digest than other meats. This is due to the low fat percentage. Chicken is 70% water, 20% high quality protein, and 10% lipids. On the other hand, chicken is high in cholesterol, leading people with high cholesterol levels to be watchful of their intake. Moreover, chicken has vitamin b, iron, and B group phosphorous all which intervene in the energy metabolism. Minerals such as zinc are essential for the immune system.
Finally, orange is a fruit eaten throughout winter. The juicy fruit is reach in vitamin C, which helps us fight colds and stimulate out immune system. Additionally, orange also has vitamins from the B and A group, potassium, calcium and phosphorous.
